Chefs Chris Sedgwick and Carlos Cisneros come from different generations, different countries, and different culinary traditions — yet they share the same passion for bold flavors, hospitality, and bringing people together.
Chris, raised in the “’Burg” in the 1960s and ’70s, began cooking at just 15 years old in his family’s Italian restaurant. Nearly five decades later, he remains driven by the same love of food that inspired him as a teenager. Over the past 35 years, he has built the Sedgwick Restaurant Group and launched Pure Taqueria Franchising, creating concepts rooted in authenticity, energy, and community.
Carlos grew up in Monterrey, Mexico, during the 1980s and ’90s. With 23 years of professional cooking experience, he has honed his craft in steakhouses, sushi restaurants, five-star hotels, and traditional Mexican kitchens. His style blends discipline, technique, and deep respect for Mexican culinary heritage — always delivered with heart.
Seven years ago, Chris and Carlos met and quickly formed a friendship grounded in shared passions: food, tequila, backyard chickens, good music, and great company. You’ll often find them in Dave’s Garage — tequila in hand, Carlos working the plancha, friends and family drifting in for a drink, a bite, and lively conversation.
Together, they bring that same spirit — a love for the strange, the delicious, and the unforgettable — to Lawrenceville.
